thin mint cookies

Janet's Thin Mint Cookies

12 oz. bag Chocolate Morsels
(I combine dark and milk)
1 tbsp. Mint Extract
4 tbsp. Oil
Ritz Crackers

Pour chocolate morsels in stovetop pan. Add mint extract and oil.  Stir constantly,  monitoring the blending until smooth and creamy.  Remove from heat and dip crackers in the chocolate.  Place on wax paper until cool.  Close your eyes and reminisce about Girl Scout cookies.  Let your taste buds do the rest.  Enjoy.

This recipe was passed on to me this weekend by my friend, Janet, who is a master baker.  She knows I am not and thought I would appreciate this recipe as it does not require any baking at all.  xo
